KBB#27 Fortune Cookies




Begitu terima surat cinta, langsung panas dingin .... waduh, fortune cookies ?!?! ... langsung kebayang trickynya .... tapi ya tetep harus dijalanin toh ? katanya "Berani Baking" ?

Percobaan pertama, gatot ... pakai parchment paper, kertasnya melengkung-lengkung karena basah kena adonan, jadi adonan tidak bisa rata, patah deh waktu matang. Akhirnya ganti pakai silpat. Mulus sih, cuma belum dapat feeling kapan saat tepat keluarin dari oven, yang ada kelembekan, ... ga bisa firm (letoy), atau kekerasan ... patah ga bisa dilipat ... OMG !!!! gemes ... banget. Padahal konsistensi adonan udah ok punya. udah gitu karena pakai almond extract, baunya membuat mual, ga ada yang mau makan.

Akhirnya coba bikin lagi. Bener-bener nongkrongin di depan oven. aku skip almond extractnya, konsistensi adonan aku jaga, aku tambahin sedikit air lagi dari resep, biar adonan bener-bener runny ... Cukup berhasil, so far so good, cuma tangan kepanasan ga karuan .... hahahaha ... tapi rasa dan teksturnya ok punya, Farras sama Kirana bolak-balik cemilin. Sampai harus diumpetin beberapa biji, takut ga sempet foto ... dan mesti ngulang lagi, oh no..... !!!!

Terus terang bingung tentang tema foto. Mana cookiesnya tinggal 4 biji ini aja, aduh ... Akhirnya keinget punya amplop angpau pembagian di kantor, iya ... kenapa ga tema merah angpau ? Jadilah, fortune cookies for Gong Xi Fa Cai !!!

Fortune Cookies

Ingredients:
2 large egg whites
1/2 tsp pure vanilla extract
1/2 tsp pure almond extract
3 tbsp vegetable oil
8 tbsp all purpose flour
1 1/2 tsp cornstarch
1/4 tsp salt
8 tbsp granulated sugar
3 tsp water

Directions:
1. Write fortunes on pieces of paper, that are 3 1/2 inches long and 1/2 inch wide. Preheat oven 300 'F. Grease 2 - 9x13 inch baking sheet.
2. In a medium bowl, lightly beat the egg whites, vanilla extract, almond extract, and vegetable oil until frothy, but not stiff.
3. Sift the flour, cornstarch, salt and sugar into separated bowl. Stir water into flour mixture.
4. Add flour mixture into the egg white mixture and stir until you have a smooth batter. The batter should not be runny but should drop easily off a wooden spoon.
Note: If you want to dye the fortune cookies, add the food coloring at this point. Stirring it into the batter. For example, I used 1/4 tsp green food coloring to make green fortune cookies.
5. Place level of tbsp of batter onto the cookies sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tbsp of batter forms into a circle 4 inches in diameter.
6. Bake until the outer 1/2-inch of each cookies turns golden brown and they are easy to remove from the baking sheets with spatula (14-15 minutes).
7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of cookie. To form the fortune cookies shape, fold the cookie in half, then gently pull the edges, downward over the rim of a glass, wooden spoon or the edges of a muffin tin. Place the finished cookie in the cup of a muffin tin so that it keeps its shape. Continue with the rest of cookies.


Tips:
- Percobaan kedua dikocok pakai whisk, ternyata malah lebih berhasil membuat adonan yang runny daripada dikocok pakai mixer.
- Almond extract lebih baik diskip, lebih enak hanya dengan aroma vanilla.
- Jangan membuat banyak cookies dalam satu kali pemanggangan, 2 cookies saja sudah cukup, karena cepat mengeras, nanti tidak sempat dilipat.
