Blooming Brilliant Brownies


Blogwalking ke mbak Anne, akhirnya coba resepnya mas Jamie ini. Waktu ngelihat hasilnya agak skeptis, karena kayak adonan belum mateng ... lengket-lengket ... tapi pas nyoba rasanya .... sampai merem melek ... waktu kubawa ke kantor, akhirnya berbuah pesanan. Thank you mbak Anne ...

Bloomin' Brilliant Brownies

Ingredients
250 gr unsalted butter
200 gr fairtrade chocolate (70% cocoa solids), broken up
Optional: 75 gr dried sour cherries
Optional: 50 gr chopped nuts
80 gr cocoa powder, sifted
65 gr plain flour, sifted
1 tsp BP
360 gr caster sugar
4 large free-range or organic egg
Optional: zest of 1 orange

Cream Cheese Layer
150 gr cream cheese
1 egg
2 tbsp sugar
Mix cream cheese until fluffy, pour egg and sugar, mix until combined.

Directions
- Preheat oven 180 'C/350 'F/gas 4. Line a 25 cm square baking tin with greaseproof paper.
- In a large bowl over some simmering, melt the butter and the chocolate and mix until smooth. Add cherrie and nuts, if you're using them, and stir together.
- In a separate bowl, mix together the cocoa powder, flour, baking powder, and sugar, and then add this to the chocolate, cherries and nuts mixture. Stir together well. Beat the eggs, and mix in until you have a silky consistency.
- Pour mix into the baking tray, top with cream cheese. Place in the oven for around 25 minutes. You don't want to overcook them so, unlike cakes, you don't want a skewer to come out all clean. The brownies should be slightly springy on the outside and but stil gooey in the middle. Allow to cool in the tray, then carefully transfer to a latfe chopping board, and cut into chungky square. These make a fantastic dessert.
